Well, I didn't get out on Thursday but yesterday I chased flounder around Nassau Sound during the outgoing tide with mud minnows. Awesome day, flat and light breeze, very comfortable. Fished hard catching a few small ones and ending up with only one 16 inch flounder worth keeping. My thermometer must be off cause the water temp read 59 degrees. Spoke with a couple other anglers and they had little to report, one catching and releasing 3 trout for the whole day, another caught a couple of black drum. A couple of sheeps fishermen did ok under the bridge. Nothing else to report. Back to work today, there's allways next time, but that flattie is going to taste good.

Decent fish Mark--I don't keep any flounder under 14 inches. And sometime, try cracker crumbs for breading if frying--I like that better than cornmeal.

At least you got out there. Gotta love those flatties. That's my favorite fish to clean, if I had to pick one to clean. I bet their doing good on the sheepshead at the jetties right about now.

The good thing was, I caught what I was targeting. If I'm specifically after one type of fish, whether it's reds, trout, etc., if I get what I'm after (in decent numbers) it's a great day. All others are bycatch and considered consolation prize if they're keepers (unless they're oversized then the fight is worth all effort) and it makes it a good day. If I'm looking for a smorgasboard (spelling?) then any keeper is a good day. Then again, if I don't catch anything, it's still a good day. Who am I kidding. If I go fishing, it's a good day even if I'm skunked.

Pretty sure the sheeps are everywhere at the jetties.

Thanks for the tip Jim. I'll have to try it. We , er Angela, has sort of a 50/50 mix of cornmeal and flour. No batter. We put the dry mixture along with Old Bay Seasoning, add extra paprika, cayenne pepper and garlic powder to taste into a big zip lock bag. Then we put the fillets in the bag, zip it up and give it a couple of shakes. As we take the fillets out we knock the excess off before putting into the pan with olive oil. Yeah, I know, peanut oil is good, but for a different flavor and one I prefer, olive oil is better for pan fry. If deep frying then peanut oil is the way to go. I prefer the light crust doing it this way. I'll try the Cracker Meal next time though. Always like trying new stuff.

Mark, if you decide to stay with the flour/cornmeal mix, you might want to buy a bag of Masa in your local Mexican food section and use instead of regular flour. Essentially, it's corn flour--and though I've never tried it, it just might be sufficient by itself--just a thought.

They are differnet tasting pan fried and deep fried, pan frying I like to use Itilian bread crumbs and fry them at a lower temp.Aint no bad flounder, even salt and peppered in the broiler works for me!

I've used masa to make tamales and tortillas from scratch before, but never thought of using it as a frying ingredient. Just might have to try that. Thanks.
